With many European merchants trading in its ports, Cancun cuisine deliciously combines European and Mayan influences. Ingredients commonly used are sour oranges, which serves as a pungent marinade; achiote, or annatto seeds; pepitas, or pumpkin seeds; and chaya, local spinach packed with vitamins, minerals and protein.
